BICA (Soft cake from Galicia)

You do not know what to do with egg whites? Here you have an idea.

You can offer a delicios, sweet and soft cake to your guests! This cake will be a guaranteed success if your guests like cakes that are not heavy.

This cake is typical from our origin region, Galicia, and is a very good option when you don't know what to do with the egg whites, for example after making vanilla cream (here can you read the recipe). It is also a very easy to make cake, you will only need some time for baking, but all the preparation is done very quickly.

5 egg whites

200 g flour

200 ml cream

100 g butter

340 g sugar

1 baking powder

Tricks! Even if it will not be the typical "bica", this cake is also very good filling it with vanilla cream. Do it as follows: pour half of the mixture in the shape, put som vanilla cream and on the top of that the rest of the mixture. It's delicious!!

Directions:

Beat cream until smooth. For optimal results have the cream in the fridge until you start beating it, you can also put the mixer rods and the bowl in the fridge, that will make easy and you will come faster to the desired result (we have never done that and the result is very good anyway). Add the butter (must be at room temperature, soft - to mix easy with the cream -, but not melted). Put this mixture aside.

Take another bowl and beat egg whites and sugar stiff (keep 40-50 g of sugar that are used in a later step). Add the flour and the baking powder. Mix good to avoid clumping. Add this mixture to the mixture you made before and mix together until a homogeneus mixture.

​Baking:

Pour the mixture in a shape greased beforehand (aprox. 30 x 20 cm), spread 40-50 g og sugar on the top and bake in pre-heated oven (at 180 ˚C, set the heating on both above and below and the fan), in the middle of the oven, for arround 60 min. Take the cake out from the oven and let it cool down.
