CHOCOLATE CAKE WITH MELTED CHOCOLATE

Irresistible juicy chocolate cake.

 

A dream of a chocolate cake that you can prepare for big occasions. A cake that really tastes chocolate.

This chocolate cake will impress your guests. Use it as a base cake in a multi-layer cake, or have on your preferred icing, mousse, cream, ...

150 g chocolate (with milk or dark)

50 g butter

5 eggs

125 g wheat flour

125 g sugar

1 ts baking powder

Ingredients (for a ø22 mould)

Directions:

Melt the chocolate and the butter together in a water bath (you can also melt it in microwave, but be careful that it does not get burnt!!).

Separate the egg yolks from the whites and whisk the egg yolks.

Take another bowl and sift the flour and the baking powder, pour the melted chocolate over, the the sugar and the egg yolks. Whisk everything together until you get a mixture of thick consistency.

Whisk egg whites stiff and stir into the mixture. Whisk everything well without getting too much air in the mixture. See picture of the different steps:

Baking process:

Prepare the mould buttering and covering with baking paper (you can choose if you want to cover the whole shape or just the bottom, if so grease well the shape to unmould the cake easily). Pour the mixture in the shape and your cake is ready to be set into the oven.

The oven must be pre-heated at 175 ˚C (use the convection mode), bake in the middle of the oven during approx. 30-40 min. Check if your cake is ready by using a skewer (if it comes out clean, the the cake is ready). Let the cake become completely chilled on a rack.

Tricks!

1.- To obtain a flat and evenly cooked cake we use the kitchen towel method. Put a damp kitchen towel around your shape inside the oven, adapt it to your shape by folding it as many times as you need. Follow the baking process indicated above. The result is a completely flat baked cake.

2.- The baking time depends on the oven that is used, so you must remember to check after 30 minutes, if the cake is still very raw on the inside and well done on the outside, lower the temperature to 165˚C and let it in the oven a bit longer (check every 3-5 min)
